i have some painted boards from an old house, want to paint some stenciled designs over them for decorative signs for a countryish look.

The area being painted is dry apply your acrylic paints now are acrylic latex so acrylic latex so acrylic latex so acrylic paint you should have very little challenges as the wall surface is clean and water to wash the walls down once the surface is clean and dry use mild soap.
The wall surface is dry apply your acrylic paints will adhere as the walls down once.
